Josh shot his elk on opening day this year, and it was a good thing he did because it took us the entire next week to get it deboned, caped out, jerkied, and sent off to the taxidermist! I have to say, Dana Cold Storage in Thayne seriously makes the best jerky, and Lallatins did our sausage and it turned out awesome! Good thing, because we have TONS of it to eat! Now we have to figure out how we are going to get that dang thing in our house when we get it back from the Taxidermist! I was joking about taking out a window and then that night I saw Josh measuring the size of the window in our front room :)
